Warning: After this, vampires will avoid you at all costs. If you’re as obsessed with garlic as I am, this loaded garlic bread will be your new favorite. Crunchy, cheesy, garlicky goodness, packed with protein and just the right kick of heat.

Garlic bread has always been a comfort food. But sometimes, I want it to be more than a side dish—something loaded enough to be the main event. That’s how this recipe came to life! Think crispy baguette, rich roasted garlic butter, tender chicken, melty cheese, and a little kick from jalapenos. It’s easy, satisfying, and a serious crowd-pleaser.

Ingredients:

For the Roasted Garlic Butter

  • 1 whole head of garlic

  • 50g unsalted butter (softened)

  • 1 tbsp olive oil

  • 1 tsp dried parsley

  • Pinch of salt

For the Toppings

  • 1 baguette (French or any crusty bread you like, even homemade)

  • Cooked chicken (shredded or diced)

  • 1 onion

  • 1 peppers

  • Pickled jalapenos (optional, for a spicy kick)

  • mozzarella cheese (or any cheese that melts well)

  • Chili flakes (optional)

  • Spring onions for garnish (optional)

    Instructions:

    Step 1: Roast the Garlic

    • Preheat your air fryer or oven to 180°C (350°F).

    • Slice the top off the garlic head, drizzle with olive oil, wrap it in foil, and roast for 20-30 minutes until golden and soft.

    • Once cooled, squeeze out the cloves into a bowl.

    • + I like to do multiple at once as I love roasted garlic on hand

  • Step 2: Make the Garlic Butter

    • Mash the roasted garlic with softened butter, olive oil, parsley, and a pinch of salt until smooth.

  • Step 3: Prep the Baguette

    • Slice the baguette sideways creating indents not going all the way through.

    • Spread a generous layer of the roasted garlic butter in ALL crevices.

    • Optional: Toast the bread under the grill for 2-3 minutes to get it extra crispy before loading it up.

  • Step 4: Add the Toppings

    • Layer the chicken, sautéed onions and peppers, jalapenos, and finish with a generous handful of cheese.

    • Sprinkle some chili flakes if you like a little heat.

  • Step 5: Bake

    • Bake at 200°C (400°F) for 8-10 minutes or until the cheese is bubbly and golden.

    • Garnish with chopped optional spring onions and serve hot.
